Foodie Friday: Sweet Potato Scramble

Happy Foodie Friday! This simple dish is a staple for my week! It is a great breakfast or lunch that is tasty and very filling. A great source of protein and healthy fats, keeping you energetic and ready to get through your day with ease!

Step 1: Preheat the oven at 400 degrees Fahrenheit and gather ingredients.

Ingredients:

(Serves 2)

1 large sweet potato

1-2 tablespoon extra virgin olive oil

1 avocado

2-4 eggs

1-2 tablespoons ghee or butter

1-2 Garlic Cloves (optional)

Red Chili Pepper Flakes (Optional)

Salt

Pepper

Step 2: Cut up sweet potato in cubes about 1/2 inch wide. Optional: Mince 1-2 garlic cloves.

Step 3: Toss sweet potato and garlic with 1-2 tablespoons of extra virgin olive oil, salt and pepper to taste in a bowl. Add a couple of dashes of red chili flakes if you prefer for some extra spice!

Step 4: Move mixture to a baking sheet (use foil if you wish). Bake at 400 degrees Fahrenheit for about 40 minutes or until golden brown.

Step 5: Heat up 1-2 tablespoons of ghee in medium-large sauce pan. Cook eggs (2-4 depending on personal preference) over-easy on medium heat. (If you prefer different style of eggs, go for it!)

Step 6: Remove sweet potato from over and using spatula place in two bowls. Cube avocado and place on top of sweet potato.

Step 7: Transfer eggs on top of potatoes and avocado in bowl. Top with salt & pepper to taste & enjoy!
